World Vegetarian Day

Today, apparently, is world vegetarian day.

I never knew this, even though I've been veg for 15 or 16 years. I'm not a big pusher of the vegetarian lifestyle... I think if I ate meat (and to me, meat is anything that had eyes) I would have an easier time maintaining a healthy weight. I know that sounds weird-- everyone thinks vegetarians must be slim. But I really tend to fill up on carbs waaay more than I should, especially at restaurants. Seems like I always have to choose between a pasta dish or an entree salad that I have to order without the chicken (but which still costs $12- for salad). I think some lean chicken or fish now and then would help me avoid so much bread and pasta. But no way is that gonna happen! I stopped eating meat early in high school, simply because I couldn't choke it down. Never really liked it.

Because I stopped eating it when I was so young, I never really learned to cook it!! Lucky for me, my husband is not a big eater of the meat products, so I can usually just dump a frozen chicken breast in a pan with some sauce and bake it, and he's happy. Don't really even have to touch it, which I don't enjoy. So, if anyone has easy chicken recipes, I always need help!
And in return, here are a bunch of vegetarian recipes for ya!

In fact, it appears that October is vegetarian awareness month. And even though I don't think everyone should quit eating meat, I am all for awareness if that equals more healthy veg options at restaurants!  I think I'll post a new recipe once or twice a week this whole month to celebrate!

I can't wait for more meatless recipes! I'm definitely not a vegetarian, but I do try to limit meat to 2 or 3 times a week. (Travis hates this, but he doesn't cook now, does he?) :)
